Sticky Date & Apple Puddings with Caramel Sauce
Ingredients
Pudding
340g pitted dates chopped
500ml water
1 tsp bicarbonate of soda
100g unsalted butter chopped (room temperature)
200g dark brown sugar
3 eggs
240g self-rising flour
½tsp ground allspice
1 granny smith apple peeled, cut into 1cm pieces
Caramel sauce
200g brown sugar
200mls double cream
100g unsalted butter chopped
300ml cream or ice cream to serve
Pre-heat oven 170C
Method
Grease eight ovenproof dishes(ramekins), or one large dish.
Place dates and water in a saucepan. Bring to boil. Remove from heat. Stir in soda. Cool slightly.
Sift the flour and allspice together.
In a large bowl beat butter and sugar with an electric mixer until creamy. Beat in eggs, one at a time, until combined.
Stir in sifted flour and allspice, then add the date mixture and add the diced apple until smooth.
Divide among prepared dishes.
Place dishes on an oven tray. Cook in oven for 25 minutes, or until cooked (when a skewer comes out clean).
While the pudding is cooking make the caramel sauce, combine all ingredients in a saucepan. Stir over a low heat, without boiling, until sugar is disolved and butter is melted. Bring to boil. Boil, stirring occasionally, for 2 minutes.
Once pudding is cooked de-mould or cut portion out of dish and drizzle caramel sauce over warm pudding and serve with cream.
